Yeah brown rice is a better comparison!
Most of the flowers feel empty, I've found 13 seeds so far...will they sprout in a bag with a moist paper towel?

These most likely won't. These are still green and need at least a couple of weeks to completely mature.
When they are ripe, they will germinate, might be that the seeds will end up sterile, but I kind of doubt it, usually sterility shows with empty seed husks.
I would use the pantyhose method now, they are getting close, but are still green.
